Recipe: Mommy’s Veggie Surprise!

My toddlers are very picky eaters when it comes to their vegetables; they weren’t always this way. I remember when I would hand them baby carrots and they’d nibble on them like baby rabbits. Ah, those were the good old days, before they had a mind of their own. Ha ha!

Everyday is some new challenge with my twins, one day they wont eat any yellow veggies and then the next day they will but they will refuse to eat any green veggies. Lil, will always refuse the green veggies and I don’t see that changing anytime soon. Well all the vegetables I would buy them, would end up thrown on the floor and it eventually became a huge waste of money to even buy them in the first place. So last night while serving them,veggies on their plates in hopes of them actually eating it I remembered a trick I had used after they had turned a year old. I hid some of the veggies in their spaghetti sauce. This took some time because I had to dice each vegetable, super small, and hope that they wouldn’t find it and avoid eating it. I diced the veggies and threw them in with the spaghetti sauce on the stove, after warming up the sauce I poured it over their pasta and served them. I spent the next 15 minutes staring at my toddlers in amazement. They not only ate all of the pasta, but they asked for seconds and for thirds!

Mommy’s veggie surprise:
1 cup of whole wheat pasta (any kind your toddler likes, my girls like ziti.)
Your child’s favorite spaghetti sauce
Your choice of mixed vegetables; try to choose different colored vegetables because they all have different vitamins and nutrients.
-Carrots, Celery, Onion, Garlic, and Peppers are wonderful because you can’t taste them in the spaghetti sauce.-

Key Tips:

  • Also I’d recommend still serving your child some veggies on their plate. If your child doesn’t eat it that’s fine, because they’re still eating the ones in their pasta sauce.
  • If your toddler has just turned a year old and doesn’t have many teeth, I’d recommend cooking the veggies, until they’re soft, and dicing them before you put them in the sauce. This prevents your toddler from choking on a tiny piece of veggie.
  • If your child is older and can chew his vegetables with no problem then I’d wash them, dice them and throw them right in; vegetables lose vitamins and minerals during the cooking process.
  • You can also buy the variety snack packs of veggies, to have a variety of small vegetables on hand. It costs a bit more, but might be convenient for some.
